The whole bunches are pressed and directly transferred into French oak for wild fermentation. 25% of the oak is new, while 75% is seasoned. This gives the wine a round balanced body and distinctive texture. The Chardonnay undergoes 100% malolactic fermentation, which adds complexity and richness.
